The Easter pizza with cheese, is a typical dish of the Easter celebrations of the Umbria region , great to enjoy both stuffed with meats typical of the area to be alone. The timing of completion include: 30 minutes of rising in a warm place, about 40 minutes to prepare (excluding the time of the rise) and 30 minutes of cooking.

Recipe of the Easter Pizza

Ingredients:
– 40g fresh yeast
– 400g of flour
– 3 eggs
100g of grated parmesan cheese 4 tablespoons of extra virgin olive oil
– 2 eggs
– 4 tablespoons of grated pecorino cheese
– 25g grated pecorino di Norcia
– 25g pecorino shavings of Norcia
– extra virgin olive oil DOP Umbria
– salt
– pepper
– 2 butter

Preparation:

First, crumble the yeast into a bowl , add 1 tablespoon of flour and 5 tablespoons of warm water and mix well until a smooth batter . Cover the mixture with a cloth and let rise in a warm place for 30 minutes . Shell the eggs , separating the whites from the yolks , beat the egg whites and then add the egg yolks , one at a time , continuing to work the mixture with a whisk . Add a cup of olive oil , parmesan , pecorino and leavened batter . Then add salt and pepper , flour and mix well until the mixture will be soft, smooth and will be visible on the surface of air bubbles. Grease the pan well , have the dough to a maximum of two-thirds of the height of the mold and let rise , covered with a tea towel in a warm place until the dough comes to the edge of the mold. Finally, bake at 180 ° C for about 30 minutes, you will notice that it is cooked if this piercing it with a toothpick will come out completely dry. It is then ready to be cut , served and eaten , warm or cold , with cold cuts or even alone .
