
Born in the vineyards between the hills, towers and medieval castles of Umbria in the heart of Italy, the Sagrantino of Montefalco is the country’s most ancient wine.
It is totally made with Sagrantino grapes that grown in the village of Montefalco and several surrounding towns, located in eastern-central Umbria, about halfway between Spoleto and Assisi. There are a dozen or so producers that work with this grape, with only about 250 acres planted in total. The wines include Montefalco Sagrantino secco, a dry DOCG red wine and Montefalco Sagrantino passito, a sweet DOCG red wine. For a long time, the Sagrantino grape variety was only used for Montefalco Sagrantino passito or to fortify mixed wines. In recent years, producers such as Arnaldo Caprai have started to use it unblended. While the origins of this grape are unclear, one fact about the grape is that it is one of the most tannic varieties found anywhere in the world. This can be a problem of course when it comes to overall balance, but the district's finest producers are taming the tannins, making it an elegant wine that has the potential to age for more than a decade.
At 9,30 AM will start your cooking classes that allow you to explore the umbrian cuisine. In the class you’ll work in a fun, hands-on environment led by our professional chef instructors. The course will be followed by lunch, when you eat the dishes you have prepared, accompanied by a our Umbrian wine. In the afternoon you will have the wine tour including: private air-conditioned minivan, guided visit of the cellars of Arnaldo Caprai in Montefalci and wine tasting.
The full cooking day is available year round on request.
